Cauli-Creamed Spinach (nightshade and dairy free)

I was inspired by a Ray McVinnie recipe I saw in Cuisine magazine the other day – a delicious looking steak with spinach and cannellini bean mash. Now not only did the recipe use butter and cream to get the consistency right, but it had cannellini beans in it which on the ‘no-go’ list for Paleo and especially for the modified AIP.

However my taste-buds were not deterred so I came up with this little beauty of a side dish to accompany our delicious steak…
