One thing I’ve found since following the paleo approach is that our grocery bills have definitely gone up with the increased amount of meat. Food in New Zealand is quite expensive, organic beef mince is around $19.99/kg and even kumara (or sweet potatoes) which are a locally grown vegetable are $6.99/kg. In the UK organic beef mince is £3.48/500g (or $13.64/kg) and sweet potatoes are £1.25/kg at Sainsbury’s – or just $2.45/kg! Quite unbelievable really… Perhaps I will explore more paleo vegetarian meals in future posts, there are some delicious looking Jamie Oliver meals that I might be able to tweak, so watch this space.
Jealously over cheap UK food prices aside, the Four Layer Beef and Bacon casserole cost about $32 to make, and yielded 8 portions – around $4 a portion excluding the broccoli side.
I won’t retype the recipe as it can be found here: http://www.thepaleomom.com/2014/05/paleo-kitchen-four-layer-beef-bacon-casserole.html
